#SCBDRecipe: Chocolate Chip Pumpkin Cookies



Last week was National Pumpkin day and what better way to celebrate than with an easy Chocolate Chip Pumpkin cookie. This recipe is simple only taking 25 minutes to prep and makes 36 cookies. 

This is a great dessert to bring to a friends or family’s house for Thanksgiving. Have them for breakfast or have them for dessert. I found this recipe at VeryBestbaking.com 


Here’s what you will need:


  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup (1 stick) butter, room temperature
  • 1/2 cup brown sugar
  • 3/4 cup granulated sugar
  • 3/4 cup LIBBY’S® 100% Pure Pumpkin
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels


PREHEAT oven to 375° F.


  1. flour, baking soda and salt in medium bowl.
  2.    Beat butter, brown sugar and granulated sugar in large mixer bowl with electric mixer on medium until well blended.
  3. Add pumpkin, egg and vanilla extract. Mix on low until combined
  4. . Stir in flour mixture. Batter will be soft. Fold in morsels. Drop by tablespoon onto ungreased baking sheets about 2 inches apart.

BAKE for 10 to 12 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Store in airtight container.

TIP: Serve cookies warm! For oyey-gooey delicious melt in your mouth cookies!


Review: Delicious and Easy! These cookies were so easy to make as most of the ingredients I already had in the house. With the prep time being only 25 minutes it was so simple. I brought my cookies into work and by the end of the day there were no cookies left! Everyone kept raving about them. As some were cautions because they did not like pumpkin everyone said they were shocked at how subtle the pumpkin flavor was ! This cookie is also great if you need to make a cookie for a cookie exchange party!
