#SCBDRecipe Cornmeal Pancakes with Peaches and Strawberry Sauce


The boyfriend and I love cooking and baking new foods. We often search for recipes online, sit down and look through magazines and make a list of all the foods we’re going to try. Last week, we decided to make Cornmeal Pancakes with peaches and strawberry sauce. This recipe called her “blackberries,” but we didn’t have them, so we subbed peaches. 

If you’d like to try your hand at cooking breakfast with your man one morning, I highly recommend this recipe. It’s not an exact replica of the recipe above. Rather, I altered a few ingredients.

Cornmeal pancakes

1-1/2 cup Flour

1-1/2 cup Yellow Cornmeal

3 Tablespoons Baking Powder

4 Tablespoons Sugar

2-1/4 cups coconut milk

2 Eggs

3 teaspoons Vanilla

4 Tablespoons Butter, Melted


3 diced peaches

½ cup of Strawberry syrup

1 cup of cold water


Mix flour, cornmeal, salt, baking powder, and sugar in a bowl. 

In a separate bowl, mix milk, eggs, and vanilla and pour into the dry ingredients, stirring gently.

Stir in melted butter. Set batter aside. If batter is overly thick, splash in a small amount of milk.

In a saucepan, combine diced peaches, strawberry sauce and water. Bring to a gentle boil and cook for 5 minutes on low. Stir in cornstarch, then continue cooking, using a whisk. Once it’s thick, remove from heat.

Stack three pancakes, and drizzle with the sauce and peaches.
